Mean Kinetic Temperature (MKT)

It is widely recognised that MKT gives a far more representative picture of the effects of temperature changes on sensitive materials such as pharmaceuticals and food products during storage and distribution.

It can be shown that the shelf life of sensitive materials is directly related to the MKT. MKT, as defined by the United States Pharmacopoeia (USP), is a single calculated temperature at which the total amount of degradation over a particular period is equal to the sum of the individual degradations that would occur at various temperatures. In non-technical terms, the MKT converts a variable temperature into an equivalent steady temperature, which is then used to determine the effect of the excursion on product quality.

For example Pharmacopoeia recommendations for "controlled room temperature," define that the temperature should be maintained between 15 deg C and 30 deg C, with a mean kinetic temperature of less than 25 deg C. The calculation gives increased weighting to higher temperature excursions than normal arithmetic methods, recognising the accelerated rate of thermal degradation of materials at higher temperatures.

Testo 926 Thermometer - Thermocouple type T

The Testo 926 presents an ideal low cost method for measuring dishwasher rinse temperatures for food safety / HACCP compliance purposes.
The meter must be located outside the dishwasher, and a thermocouple sensor must be located in the area to be measured.
For domestic dishwashers, we can supply a Type T autoclave-grade thermocouple wire with a bare junction.
Simply run the thermocouple wire through the seal at the top of the dishwasher door, bending the wire so that it hangs neatly inside without touching anything.

For commercial dishwashers, often there will be a probe sleeve already present in the rinse water tank, for measuring the rinse water temperature. If this is the case, Esis can supply a Teflon insulated thermocouple sensor that can be easily installed in the probe sleeve in the dishwasher. Testo 735   Multiple channel temperature measuring

Testo 735 - the multi-channel measuring instrument with highest versatility.
Fully equipped, 6 temperature probes can be registered and displayed: three radio probes and three attachable probes.
For classical probes with a wire, there are two inputs available for fast thermocouple probes (Type K/T) and one input for high precision Pt100 probes.
